Spaghetti Squash Fajita Bowl

Ahhhhh. I haven't updated my blog in over a month! I just revamped it and I will be making more of an effort to post weekly! Life seems to get away with me some days! Harper doesn't make it too easy to use the computer either lol!

Over the weekend I made this delishhh Spaghetti Squash Fajita Bowl while watching the ALABAMA game. OMG what a game! 

I wanted something delicious that tasted like a CHEAT but obviously I'm still following the 21 Day Fix meal plan so cheating was out of the question! This recipe is perfect and oh so yummy!

What you'll need:
-Smaller spaghetti squash
-raw lean steak strips (I bought the fajita steak)
-1 large green bell pepper
-1 large red bell pepper
-1 large red onion
-1 jalapeño
-1 16oz. can diced tomatoes
-1/2 tsp black pepper
-1/2 cumin
-2 tbsp minced garlic
-fresh cilantro
-Mrs. Dash Fiesta Lime Seasoning
-1/4 cup canned black beans (I get the organic with less sodium)
-1/4 cup frozen corn kernels
-Shredded cheddar cheese


STEP 1
Heat oven to 350
Cut the stem from the spaghetti squash then cut entire squash in half.
Spray a nonstick baking sheet with extra virgin olive oil.
Place squash inside down on baking sheet 
Cook for 30 minutes or until outside is a little soft 
(cooking time may depend on size of spaghetti squash)

STEP 2
Spray a non-stick pan with extra virgin olive oil spray
Add 1 tbsp of minced garlic and broke up a handful of cilantro (as much as you like). 
Add the fajita steak to the pan 
Sprinkle with Mrs. Dash Fiesta Lime seasoning 
(I love seasoning.. so use your own discretion I cover it heavily) 
Cook the meat on low-medium heat until most of the steak was medium-well 
Stir frequently. 
Chop up the bell peppers, onions, extra cilantro, and jalapeño.


STEP 3
Remove steak from the pan and placed to the side. 
Without washing add EVOO spray to the pan one more time
Add 1 tbsp minced garlic
Add chopped veggies
Saute on medium for 4-5 minutes

STEP 4
(optional)
Add the steak. 
(for those on the 21 Day Fix meal plan 
you can keep them separate for portioning purposes) 

STEP 5
Let the fajita mix simmer on warm.
Remove spaghetti squash from the oven.
Flip squash over
Scrape and remove inside with fork to make little noodle shaped pieces
Place corn and black beans in a microwave safe bowl
Sprinkle with Mrs. Dash Fiesta Lime Seasoning
Heat for 1 minute
(for this step I portioned out 1 yellow of corn and 1
 yellow of black beans for those following the 21 Day Fix)

STEP 6
Layer your ingredients into the squash bowl. 
I did steak/veggie mix then spaghetti squash then corn/black beans and then steak veggie mix
(be sure to portion out veggies and steak in this step
 if you are following the 21 Day Fix. I filled up 1 green of squash and 1 green of fajita veggies)
Sprinkle with shredded cheese (don't forget to use that blue container!!)
 Broil until cheese is melted and ENJOY!

It's been so long!!

Ahhh it's been a while since I've posted last. Life catches up with you and the next thing you know weeks have gone by! I have a sick little one tonight so while we're rocking I figured I better update! 



So I just finished round 2 of the 21 Day Fix and I lost 25lbs total! Woooo hoooo!
Today I wore a dress that I haven't worn in 2.5 years. Needless to say it's been a good day despite my sick baby. I'm taking a week off from the fix and I'm starting back on Monday 10/6 with the rest of my wonderful challenge group! 

I discovered this fab shakeo recipe and I've been obsessed with it ever since! 

Vanilla Cake Shakeo
1 scoop vanilla shakeology
1 cup water
1 cup almond milk
2 tsp maple syrup
Ice
~~> blend and bam! Done! Super easy and super delish!!

A little vulnerability..

The main thing I've learned in my 11 days as a Beachbody coach is to be vulnerable. It's not something I've mastered by any means but it's something I am working on. People want to hear my story, they want to relate to my struggles. Life happens to everyone whether you want it to or not. Its a roller coaster of good and bad and you never know what it will throw your way next. January of 2013 I was so stoked to be in my last few semesters of college. I was excited to get that killer post-grad job that everyone dreams of. I was transitioning from a wild and crazy college kid to a better version of me, more serious, more driven. Then BAM... coming January of 2014

When I saw those 2 little lines my whole world stopped. Life as I once knew it was no longer an option. I was scared, shocked, and unsure of many things. As time went on the 'scared' stuck with me but the 'shocked' turned into excitement and the 'unsure of many things' turned into determination to succeed.  While I was pregnant I promised myself that I wouldn't put off the one thing I had worked so hard to accomplish, my degree, and I wouldn't stop busting my butt to save money for the months to come. In December 2013 I got that shiny new diploma and on January 9, 2014 I received the greatest gift God had ever given me, a beautiful baby girl.

I like to say my 2 greatest accomplishments came in the same month because my diploma didn't arrive until January (:

Through my pregnancy, I made horrible choices I stopped eating healthy and ate whatever sounded the most delicious. I stopped working out because I was tired from working 2 jobs and going to school. I was stressed out, hormonal, negative, and feeling alone (even though I have so many amazing people in my life) I put so much motivation into school and work that I basically gave up on myself physically. If I could do all over I would put down the Cookie Dough Ice Cream and pick up a glass of Shakeology. I gained an unimaginable 70lbs while I was pregnant. So unhealthy and unhappy. Since then, I've lost 55 pounds (thank you breastfeeding!) and 10 are because of BeachBody! This stuff really works y'all! My new goals are to lose 30-40lbs and feel fantastic about myself again, to gain control over my finances, and to help others feel better about themselves. Sometimes opportunities are presented to you and you aren't sure why but the thing to do is embrace the opportunity and put all you have into it. Thats what I plan to do with BeachBody.

A Little 21 Day Fix Italian!

I'm so excited that my blog has been getting so much action! I've had quite a few view so far! Anyways, I am VERY excited to announce that I've lost 10 LBS THIS WEEK! Woooohooo. I've been working so hard its nice to know its paying off. I will admit after working so much this weekend on top of my mom duties there were a couple of times just ordering some pizza crossed my mind. BUT I resisted the urge and decided to make my own 21 Day Fix Variation of pizza! Oh man its yummy too! Who else struggles with falling victim to the convince of to go orders? BE STRONG. 

Here is the recipe! OH and I use 1 green container per serving ;)

21 Day Fix Marinara:

  • 2 teaspoons olive oil (extra virgin, if you have it)
  • 1/2 red onion (finely chopped)
  • 2 tablespoons italian seasoning
  • 1 tablespoon fresh organic basil paste
  • 1/2 teaspoon black pepper
  • 4 cloves garlic (smashed)
  • 2 28 oz. Can crushed organic tomatoes. (Check label for no added ingredients)
  • 1 6 oz. Can tomato paste (organic for best taste. Check label for no added ingredients)
Directions
  • STEP 1: Heat olive oil in large skillet
  • STEP 2: Chop red onion finely and press/chop garlic
  • STEP 3: Sweat over low heat until onions are translucent. Don't let them get brown!
  • STEP 4: Add italian seasoning, basil, and pepper. Sauté for a minute or so.
  • STEP 5: Add tomato paste and stir. Sauté paste for 5 minutes on medium heat.
  • STEP 6: Add crushed tomatoes 
  • STEP 7: Simmer for 30-45 minutes



After the marinara was done I added it to half an ezekiel english muffin with a little mozzarella! DELISH!

21 Day Fix Tuna Salad

So it has been crazy at my house! Harper decided she is on a sleep protest and literally has only slept for 7 hours since yesterday morning. AHHHHHHH! Not to mention I had a meeting this morning and had to rush home to clean up the house and get ready for work tonight! #momlife let me tell you its crazy! But I am committed to losing my baby weight so I stopped what I was doing to whip up a healthy lunch! I actually haven't been to the grocery so I am running a little a little low on the necessities but that won't stop me! Here it is folks, healthy tuna salad! enjoy! :) 

1/2 green- red onions
1/2 red- plain greek yogurt 0%
1 red- tuna in water, drained (which was the whole can btw)
1/2 red- 1 hard boiled egg
1/4 tsp Mrs. Dash Garlic & Herb
1/4 tsp ground mustard
1/4 tsp parsley
1/4 tsp pepper
pinch of seasalt (just a pinch ya'll!)
Mix together and enjoy with 3 romaine lettuce leaves

Total: 
1 1/4 Green
1 Red

"It's too expensive"

If you don't know now you know! 
Getting healthy never tasted so good (; for those of you who might use the excuse that the $115 bag of Shakeology is too expensive! I bet you find yourself buying these items on a regular basis. I know I did and I know I used that very excuse! It's never too late to make a change. 

Apple Pie Shakeology!


Apple Pie Shakeology:
1/2 cup applesauce
1/2 tsp cinnamon
1 cup water
and ice!

So yummy.. enjoy! :)
